Roasted Cauiflower with Lemon - Parsley Dressing

Ingredients
  1. 2 head cauliflower (about 2 pounds)
  2. 12 tablespoons olive oil
  3. Kosher salt
  4. Freshly ground pepper
  5. 2 cup fresh flat-leaf parsley leaves
  6. 1 teaspoon finely grated lemon zest
  7. 4 tablespoons fresh lemon juice
Preperation Instructions
  1. Toss cauliflower and 4 tablespoons oil on a rimed baking sheet
  2. Season with salt and pepper.
  3. Roast at 400 degrees
  4. Tossing occasionally until tender and golden brown
  5. Dressing
  6. Pulse parsley, lemon juice, and remaining 2 tablespoons oil in a food processor
  7. S&P Toss cauliflower with lemon-parsley mixture and top with lemon zest.
