Dash of Burbs’ – Herb Stacked Potatoes

This is a modern spin on a classic herb potato dish – butter, fresh herbs, and potatoes stacked and browned in a two step cooking preparation. This is a fantastic side dish to your holiday meal or great for family dinner during the week. Great to pair with beef on a cold winter evening.

Ingredients
  1. 1 cup (2 sticks) unsalted butter
  2. 12-24 small thyme sprigs
  3. 1 garlic clove, minced
  4. 4 pounds small Yukon Golds
  5. 4 teaspoons
  6. Kosher salt
  7. Freshly ground black pepper
Instructions
  1. Melt butter in a small saucepan over medium heat
  2. Brush muffin cups all over with butter.
  3. Line bottoms with parchment-paper rounds
  4. Arrange 1-2 small thyme sprigs in center of each round.
  5. Drizzle 1/2 teaspoon butter into bottom of each cup.
  6. Add chopped thyme and garlic to remaining butter in saucepan medium-low heat until fragrant
  7. Placed Slided Potatoes in a large bowl
  8. Pour Herb butter and season with Salt & Pepper - coat well
  9. Divide potato slices among muffin cups, layering overlapping slices to create a circular pattern
  10. Drizzle any remaining butter and seasoning from bowl over.
  11. Cover muffin pan tightly with foil and place on a baking sheet (350° - 35 Minutes)Remove foil; invert on a rimmed baking sheet over pan
  12. Turn, lightly tapping on counter, releasing potatoes onto sheet
  13. Increase heat to 425°
  14. Bake until bottoms and edges are golden and crispy, 25-30 minutes
